EASY PEASY HEALTHY TREATS

If you have a bit of a sweet tooth like me, but you don't want to eat the devil called sugar! Then opt for these guilt free yummy healthy treats and get the fix you need. I've posted these treats on my Insta and FB numerous times over the past couple years and many have always asked for the recipe. I have adjusted and added in a few extra ingredients to perfect it to the way that I like. So here you go, if you're keen to get your hands sticky and indulge in some healthy bites (the best part is they're super easy and quick to make).

PROTEIN PEANUT BUTTER CUPS

Prep Time 15 mins | Cook/Set Time only another 15 mins

Bottom Layer (serves 12 cups)

  • 2 Tbsp coconut oil
  • ¼ cup smooth peanut butter (all-natural)
  • Crushed walnuts or crushed almonds to the amount that you wish
  • 1 tsp pure vanilla extract
  • ¼ cup unsweetened cocoa powder
  • 8 drops of liquid stevia or 4 tsp of stevia powder
  • 1-2 scoops of chocolate whey protein

Top Layer (serves 12 cups)

  • 2 Tbsp coconut oil
  • ¼ cup natural smooth peanut butter (all-natural)
  • ½ tsp pure vanilla extract
  • Unsweetened coconut (I mix the coconut into the mixture as well as garnish the buttercups)

Line a mini muffin tray with 12 cupcake liners (I love using the silicone reusable ones). Stir all bottom ingredients together until it's a smooth consistency and divide between the 12 liners. I don't like to have too much of the bottom layer mixture as it's quite strong for me so I like to divi it up to be about 1/4 full in each but it's up to your own preference. Put the tray in the freezer on a flat surface whilst you mix up the top layer ingredients. Again, stir all ingredients together for the top layer until it's a smooth consistency and divi on top of the set chocolate cacao mixture, garnish the buttercups with some coconut on top before setting. Chuck it in to the freezer on a flat surface and freeze until solid which takes approx 10-15 mins. Leave treats in the freezer when not being eaten and take long walks to freezer as often as you wish to eat them.

PROTEIN PEANUT BUTTER, CHOC CHIP + CHICKPEA COOKIES

Prep Time 15 mins | Bake Time 10 mins

Ingredients serves about 12 cookies dependent on the size you make them

  • 1/2 tbs vanilla extract
  • 2/3 cup natural peanut butter smooth or crunchy
  • 4 Tbsp honey
  • 1 1/4 tsp baking powder
  • ½ tsp salt
  • 1-2 scoops of vanilla whey protein
  • 2/3 cup of chocolate chips

Pre heat the oven to 180 degrees. In a food processor mix all the ingredients together apart from the chocolate chips. Mix it to a smooth consistency (sometimes you may need to beat up the chickpeas prior to putting them into your food processor). Once very smooth, transfer the mixture into a bowl and then add the chocolate chips and mix together till evenly distributed. This mixture is very sticky, make sure that you wet your hands so that the mixture doesn't stick when you are dividing the mixture up into balls. Place onto a non stick flat baking tray (still spray with coconut oil or natural oil spray). Make sure you flatten the balls with a fork, chuck in the oven and cook for approx 10 mins. Make sure that you keep an eye on them as all oven temps are slightly different. Leave on bench to cool down for 5-10 mins. Then voila... you can stuff your sweet face!
